Discover the recipe at the end of this article!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Frittelle: traditional Carnival sweets in Venice, history<\/strong><\/h3>\n\n\n\n<p>The<strong>\u00a0recipe of the Venetian\u00a0<em>fritole<\/em><\/strong>\u00a0appears for the first time in the \u2018300 and today we can find a trace of them in a gastronomic document kept in a library in Rome.<\/p>\n\n\n\n<p>Since the Renaissance, the frittelle officially entered the Olympus of Venetian cuisine becoming the typical dessert of the Carnival. From the end of the Christmas holidays in the streets of the city you could meet the\u00a0<em>fritoleri<\/em>, vendors who made\u00a0<em>fritole<\/em>\u00a0dressed in the typical apron.<\/p>\n\n\n\n<p>Curiosity: Do you know that in Carlo Goldoni\u2019s comedy,\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Il_campiello\" target=\"_blank\" rel=\"noreferrer noopener\">Il Campiello<\/a>, the protagonist Orsola is a\u00a0<em>fritolera<\/em>?<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Frittelle: traditional Carnival sweets in Venice, the recipe<\/strong><\/h3>\n\n\n\n<p>Although<em>\u00a0fritoleri<\/em>\u00a0were allowed to pass on the trade exclusively to their children, the recipe of\u00a0<em>fritola<\/em>has known over the centuries many variations, such as that prepared during the Jewish festival of Purim.<\/p>\n\n\n\n<p><strong>In Veneto and in the neighboring regions alternative recipes<\/strong>\u00a0<strong>were developed<\/strong>\u00a0that included wild mountain herbs, rice or even polenta.<\/p>\n\n\n\n<p><strong>The recipe we propose here is one of the most popular ones in Venice<\/strong>\u00a0and if you want to test yourself and measure your culinary skills follow it step by step and tell us how it went in the comments!<\/p>\n\n\n\n<p><strong>Ingredients (for 6 people)<\/strong><\/p>\n\n\n\n<p>400g of flour, 100g of sultanas, 1 tablespoon of sugar, 2 eggs; about 1 glass of milk, 1 small glass of rum, 30g of brewer\u2019s yeast, salt, peanut oil for frying and icing sugar.<\/p>\n\n\n\n<ol>\n<li>Put the raisins in warm water.<\/li>\n<li>Crumble the yeast of beer and add it to 60ml of warm water, stir until the yeast has melted.<\/li>\n<li>In a large bowl mix the flour with three teaspoons of sugar and the rind of a grated lemon.<\/li>\n<li>Pour the flour, the yeast dissolved in the water and start stirring with the whisk and finally add the rum.<\/li>\n<li>In another bowl, beat the eggs with a pinch of salt.<\/li>\n<li>Pour the eggs into the dough and add the milk gradually, stirring constantly.<\/li>\n<li>When you have obtained a fluid dough, don\u2019t add any more milk, then squeeze the raisins well, add them to the dough and mix to distribute well.<\/li>\n<li>Cover the bowl with a sheet of transparent film and let it rise for an hour and a half or two. When the dough has risen twice its initial volume, take it out.<\/li>\n<li>Warm up plenty of peanut oil to 170\u00b0, take small amounts of dough, about half a tablespoon, and drop them into boiling oil.<\/li>\n<li>When they start to swell, turn them around to make them uniformly brown, drain and place them in a plate with a piece of kitchen paper underneath. A partire dalla fine delle feste di Natale nelle vie della citt\u00e0 si potevano incontrare i\u00a0<em>fritoleri<\/em>, venditori ambulanti che cucinavano frittelle vestiti con il tipico grembiule.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Curiosit\u00e0: Lo sai che nella commedia di Carlo Goldoni,\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Il_campiello\" target=\"_blank\" rel=\"noreferrer noopener\">Il Campiello<\/a>, la protagonista Orsola fa proprio la\u00a0<em>fritolera<\/em>?<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:heading {\"level\":3} -->\r\n<h3>Frittelle: i dolci tradizionali del Carnevale a Venezia, la ricetta.<\/h3>\r\n<!-- \/wp:heading -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>Sebbene ai fritoleri fosse concesso tramandare il mestiere esclusivamente ai propri figli, la ricetta della fritola ha conosciuto nei secoli moltissime varianti, come ad esempio quella preparata nella festa ebraica del Purim.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p><strong>In Veneto e nelle regioni vicine si diffusero ricette alternative<\/strong>\u00a0che prevedevano l\u2019utilizzo di erbe spontanee di monte, riso o polenta.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p><strong>La ricetta che qui ti proponiamo \u00e8 una delle pi\u00f9 diffuse oggi a Venezia<\/strong>, se hai voglia di metterti alla prova e misurare le tue abilit\u00e0 culinarie seguila passo dopo passo e poi raccontaci com\u2019\u00e8 andata nei commenti!<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p><strong>Ingredienti (per 6 persone)<\/strong><\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>400 g di farina, 100 g di uvetta sultanina, 1 cucchiaio di zucchero, 2 uova; circa 1 bicchiere di latte, 1 bicchierino di rum, 30 g di lievito di birra, sale, olio di arachide per friggere e zucchero a velo per le frittelle.<\/p>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:heading {\"level\":3} -->\r\n<h3>Frittelle: i dolci tradizionali del Carnevale, come si preparano<\/h3>\r\n<!-- \/wp:heading -->\r\n\r\n<!-- wp:list {\"ordered\":true} -->\r\n<ol>\r\n<li>Fai rinvenire l\u2019uvetta in acqua tiepida.<\/li>\r\n<li>Sbriciola lievito di birra e uniscilo a 60 ml di acqua tiepida, mescolate finch\u00e9 il lievito non si sar\u00e0 sciolto.<\/li>\r\n<li>In una grande ciotola mescola la farina con tre cucchiaini di zucchero e la scorza di un limone grattugiato.<\/li>\r\n<li>Versa la farina, il lievito sciolto nell\u2019acqua e inizia a mescolare con la frusta e infine aggiungi il rum.<\/li>\r\n<li>In un\u2019altra ciotola sbatti le uova con un pizzico di sale<\/li>\r\n<li>Versa le uova nell\u2019impasto delle frittelle e aggiungi a poco a poco il latte continuando a mescolare.<\/li>\r\n<li>Quando avrai ottenuto un impasto fluido non aggiungere pi\u00f9 latte, poi strizza bene l\u2019uvetta e aggiungila mescolando per distribuirla bene.<\/li>\r\n<li>Copri la ciotola con un foglio di pellicola trasparente e lascia lievitare per un\u2019ora e mezzo o due.
