There is no truest statement: Chocolate is maybe one of the food which is most loved by children and grown-ups.<\/p>\n<p>As glutton as we are, we could not miss out on\u00a0<a href=\"https:\/\/www.vivovenetia.com\/en\/food-wine\/chocolate-factory-venice-what-to-do\" target=\"_blank\" rel=\"noopener noreferrer\">tasting<\/a>\u00a0this treat inside\u00a0<b>an authentic artisanal chocolate shop in San Don\u00e0<\/b>, a town near Venice where all secrets of high level bakery are safely guarded, while producing pastries holding the old times\u2019 flavours.<\/p>\n<p>We learnt about different tips on the most famous sweet food of the world. We found out that the\u00a0<b>cacao tree is called\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Theobroma_cacao\" target=\"_blank\" rel=\"noopener noreferrer\">Theobroma<\/a><\/b>, which, not by chance, means\u00a0<b>\u201cfood of the gods\u201d<\/b>. This small tree -between six and eight metres high- produces a green-purple fruit that then assumes a yellow-orange colour when ripe.<\/p>\n<p>How do we obtain from cacao seeds the chocolate we actually eat? Excellent question. To start with, the seeds picked from the tree undergo\u00a0<b>a fermentation process<\/b>\u00a0in order to extract the aromatic substances that are so delicious for the palate. After being cleaned up,\u00a0<b>the seeds are roasted and then crumbled<\/b>, so that we are able to get rid of the peel.<\/p>\n<p>Once this brief introduction had ended, we moved on to the real and proper manufacturing procedure: we saw\u00a0<b>how to obtain the delicious food of the gods from the cacao beans.<\/b>\u00a0We had been drooling for long by that time!<\/p>\n<p>The powder resulted by the cacao seeds is put into a machine which transforms it into some\u00a0<b>liquid dough\u00a0<\/b>and then it comes to term with the master chocolate maker\u2019s balanced dosage of the ingredients. Non c\u2019\u00e8 frase pi\u00f9 vera: il cioccolato \u00e8 forse uno dei cibi pi\u00f9 amati da grandi e piccini. <\/span><\/p><p><span style=\"font-weight: 400;\">Golosi come siamo, non potevamo mancare alla <a href=\"https:\/\/atvo.vivovenetia.com\/it\/gastronomia-vino\/cioccolateria-artigianale\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>degustazione<\/strong><\/a> di questa prelibatezza <strong>in una vera cioccolateria artigianale a San Don\u00e0 in provincia di Venezia<\/strong>, che custodisce i segreti dell\u2019alta pasticceria producendo dolciumi che hanno il sapore d\u2019altri tempi. <\/span><\/p><p><span style=\"font-weight: 400;\">Abbiamo appreso svariate curiosit\u00e0 sull\u2019alimento dolce pi\u00f9 famoso al mondo, scoprendo che<strong> la pianta del cacao si chiama <a href=\"https:\/\/it.wikipedia.org\/wiki\/Theobroma_cacao\" target=\"_blank\" rel=\"noopener noreferrer\">Theobroma<\/a><\/strong>, che non a caso significa \u201c<strong>cibo degli dei<\/strong>\u201d. Questo piccolo albero di 6-8 metri ha un frutto di colore verde violaceo che diventa giallo-arancio dopo la maturazione.<\/span><\/p><p><span style=\"font-weight: 400;\"><strong>Come si ricava il cioccolato<\/strong> che mangiamo dai semi di cacao? Ottima domanda. Come prima cosa, i semi raccolti dall\u2019albero vengono sottoposti alla fermentazione, che serve a estrarne le sostanze aromatiche cos\u00ec sfiziose al palato. Dopo essere stati puliti, i semi vengono torrefatti e poi frammentati per eliminare la buccia. <\/span><\/p><p><span style=\"font-weight: 400;\">Terminata questa breve introduzione, siamo passati al procedimento di lavorazione vero e proprio: abbiamo visto come si ricava dalle fave di cacao il prezioso cibo degli dei. A quel punto avevamo gi\u00e0 l\u2019acquolina in bocca!<\/span><\/p><p><span style=\"font-weight: 400;\">La polvere ottenuta dai semi viene messa in un macchinario che la trasforma in pasta liquida, dopodich\u00e8 il mastro cioccolataio provvede al dosaggio equilibratissimo degli ingredienti. <\/span><span style=\"font-weight: 400;\">La pasta libera burro di cacao e forma la parte che una volta polverizzata costituisce la polvere di cacao; alla polvere raffinata viene quindi aggiunto il burro per darle fluidit\u00e0.<\/span><\/p><p><span style=\"font-weight: 400;\">Dulcis in fundo, abbiamo terminato la visita sbafandoci il cioccolato realizzato. Non potevamo terminare in modo pi\u00f9 dolce!<\/span><\/p><p><span style=\"font-weight: 400;\">Come avrai capito, insomma, <strong>\u00e8 un processo di grande precisione e tecnica<\/strong> che richiede una lunga esperienza dell\u2019arte della pasticceria. <\/span><\/p><p><span style=\"font-weight: 400;\">Sapevi tutte queste curiosit\u00e0 sul cioccolato?
